Pecan Chicken

5 Ingredient Pecan Chicken!!

1 CUP PECANS
1/2 CUP BREAD CRUMBS
1 TEASPOON DRIED BASIL
4 SKINLESS, BONELESS CHICKEN BREASTS ( ABOUT 1 1/2 POUNDS TOTAL)
1/4 CUP HONEY MUSTARD
PREP TIME: 10 mins    COOK TIME: 20 mins    4 servings

Preheat the oven to 400 degrees. Using a food processor, grind the pecans into fine crumbs. Transfer to a wide, shallow bowl and stir in the bread crumbs and basil. season with salt and pepper. Rub each chicken breast with honey mustard, then coat with the pecan mixture. Place on a nonstick baking sheet and drizzle with 2 tablespoons olive oil. Bake until the juices run clear, 15 to 20 minutes.

Yummy and Fun Finger Foods


Here is a list that I found in one of my baby magazines a while back that has really been helpful in giving me some new ideas for finger food for Emma. I hope this might be helpful to any of you new Moms that might read this.
  • Small pieces of string cheese
  • Slivered strawberries
  • Diced kiwi
  • Cooked chickpeas or black beans, mashed
  • Diced pieces of well-cooked carrots
  • Small cubes of seedless watermelon
  • Well-cooked string beans, cut in tiny pieces
  • Scrambled eggs (after 12 months)
  • Fig Newton, broken into small pieces (one of Emma's favorites)
  • Oyster crackers
  • Small Jell-O cubes
  • Cut-up fish sticks
  • Gerber fruit and veggie puffs
  • Bite-size pieces of cheese quesadilla with sour cream
  • Diced cooked veggies and ranch dressing
  • Slivers of fruit with yogurt
  • Cubed banana rolled in Rice Krispies
  • Graham cracker pieces with cream cheese and fruit spread
  • Toast with thin layer of peanut butter (after 12 months)
  • Soft granola bars like Nutri-Grain
  • Whole wheat minis pancakes or waffles, quartered, with syrup, jelly, or yogurt
This list really helped me get out of a rut of applesauce, peas, crackers, cheese and so on. With Emma I learned that the more colorful the food is...the more likely she is to try it.
